melt 4TB butter, add 4TB flour. stir constantly for 2-3 minutes. add 1/2 cup cream, 1/2 cup broth, 1 cup shredded romano, 1/2 cup shredded parmesan, and 6 cloves of minced garlic. stir until cheese melts well, then add 1/2 cup more cream, 1/4 cup sherry, 1.5 TB parsley, 1/2 tsp nutmeg, salt and pepper. simmer stirring until smooth.
