2 pounds carrots, made soft (boil/steam). mash a-la potatos, or puree in blender if need be. mix in 3 beaten eggs, 3/4 cup sugar, 1/2 cup melted butter, 2 tbsp all purpose flour, 1 tsp baking powder, 1 tsp vanilla extract. pour into greased 2 quart casserole (half-casserole) dish. bake at 350 for 10 minutes, then top with: topping = 1 cup walnuts tossed with 1/2 cup brown sugar, 1/3 cup flour, 1/3 cup melted butter, and 1/4tsp allspice, cloves, ground ginger then bake another 30m. it won't get crusty but will be done.
