mix 2/3 cup breadcrumbs & 3TB coconut milk thoroughly; let stand for 5min. add 12oz smart ground, 3TB chopped fresh basil, 1 beaten egg (maybe 2?), 2 minced cloves of garlic, 1/2 tsp salt, 1/2 tsp pepper, and 2TB water (if no second egg). form into meatballs on greased cookie sheet. press super firmly or they'll break up before you're done cooking them. cook 8 minutes at 350, flip over, cook 8 more minutes. meanwhile heat the rest of a can of coconut mill (~14 oz), 1.5TB curry paste, 1 TB soy or fish oil, and 1TB of brown sugar in a saucepan. stir til smooth. simmer meatballs in sauce, turning to coat, for 5-10 minutes.
