Gavino's Recipe for "Chipotle-style Barbacoa" which is not authentic (doesn't use cheek meet). Made entirely in instant pot; one dish meal! I think it needs more spice than this to make it more savory, will report back next time I make it. Start with: 2 Tbs (30g) Apple Cider Vinegar ¼ tsp Garlic powder 1 tsp Cumin ½ tsp Oregano ½ tsp Pepper ½ tsp Salt add to 240 ml Hot Water 1 Tbs Lime Juice 3.5 oz can Chipotle (or less if you aren't spicy) 7g Better than Bouillon you could consider adding: - splash of soy sauce - shake of chipotle chili powder - ½ tsp of paprika Blend all of that until smooth. take 2.5 lbs Chuck steak, cut into about 6 pieces. Salt and pepper both sides, then, using avocado oil, sautee in instant pot to sear each side (probably in small batches to avoid crowding/allow it all to touch the hot surface). finally, add all beef, the sauce and 1 Bay Leaf to instapot and pressure cook on high for 55 minutes, allow to rest for 20 minutes as pressure bleeds off, then shred with fork & eat!
