place in 3 quart saucepan: 2 peeled, cored, and chopped ripe mangoes 1 peeled, cored, and chopped apple 1 cup chopped onion 3/4 cup sugar 1/2 cup chopped red bell pepper 1/2 cup raisins 1/4 cup chopped crystallized ginger (i subbed dried ginger powder and it was ok) 1/2 cup cider vinegar 2 tsp red chile flakes 1.5 tsp mustard seeds 1/2 tsp salt bring to a vigorous boil (despite appearances, there will be enough liquid to boil. keep stirring.) the simmer (no lid) for 40-ish minutes until everything is tender and the liquid is kind of syrupy. continue to stir at least once per 5 minutes. frankly i suspect that you could play with almost everything here--maybe not the mustard seeds, vinegar and onions, but all the rest could be wiggled. i certainly don't measure out stuff like the onion and red bell pepper. probably you could cut down on the sugar, definitely you could up the chile flakes--this was not spicy at all. (i think they mean the kind you put on pizza, but i used something tastier called "aleppo pepper" from penzey's spice co). and you could leave out the raisins, though i wouldn't
