marie callendar don't know nothin' about making two pot chicken pot pies: to make the crusts, mix 4cups flour 2tsp salt add: 1 and 1/3cup lard or bacon drippings. mix very gently with fingers or fork until it is clumpy. add: 8 tbsp of water, slowly/evenly. mix very gently again. it won't even begin to look like dough yet. dump 1/4 of the clumps onto a very lightly floured surface and use pressure via rolling pin to turn it into dough, which you should stick into greased 9" pie pans and/or square casserole dishes. if you use an 8" jobber it will overflow. repeat 2x. dump 1/2 of remaining clumps and roll out and set aside; repeat with remainder. cover crust with tinfoil completely. put ~2lbs of dry beans in the tin foil. bake crust at 350 for 10min with beans in. take out, take off tin/beans, bake 10 more min, until it just starts to turn vaguely golden. then add the fillin': in a huge saucepan, melt 1/3 cup of unsalted butter. once it is melted and bubbling, add 1/2 cup flour and stir until it is well-blended, bubbling, and starting to firm up. then add 3 cups of chicken stock, 1 cup of cream, 2.5 pounds of grilled, cubed boneless skiness chicken meat, 4 chopped slices of bacon, 2 tsp of paprika, 8 cloves of minced garlic, a tablespoon of pepper and a half tablespoon of salt, a couple of carrots chopped into half-moons, a couple of pieces of broccoli, a chopped onion, and 16 oz or so of sweet peas, a load of chopped fresh basil (like, a couple of ounces by weight), and 1/3 cup of red wine. stir whilist simmering for about 10 minutes, then pour into 3/5 into one crust. mix 2 cups shredded cheese with other 2/5 of chicken/sauce, and pour into other crust. top with set-aside extra crusts, pinch shut, and cut some vents in those bad boys. also, brush a beaten egg onto the crusts for extra golden-brown goodness. bake for 45ish minutes at 375; remove when crust becomes happy-colored. you can obviously skip the cheese if that's not your thing. you could also substitute or add almost any vegetable you can imagine (suggestions include bell peppers, corn, mushrooms, and potatoes). you could also skip the chicken entirely, use veggie broth, and go vegetarian (but you're on your own for figuring out a crust recipe without lard in).
