stove on medium heat melt 4 tablespoons of butter or use oil sautee 2 sweet onions, chopped, for 10-12 minutes. should be really soft. add many cloves of garlic, minced or pressed add some chicken 3# or around there. then add all the rest of this: 1 can of coconut milk or ~16 oz of full fat yogurt (more is fine) a fair amount of curry powder - probably 2-3 tbsp about half that much cumin a finger-knuckle or two worth of fresh ginger, grated with a microplane a teaspoon or two of ground coriander salt and pepper to taste and stir it up. simmer for 45 minutes or so, stirring every 5-10 minutes. simmer with lid if pretty thick, without if pretty soupy. I'm not very good at pulling it off at the right time, but the chicken should be cooked through but not yet rubbery. if you like, some sliced green onions on top of it are pretty awesome for presentation and good for flavor. pretty much begs for rice or chapatis and raita
