rebecca's vegan apple bread 5-6 apples peeled & chopped: cover in water & cook over medium heat until soft enough to mash (after draining water) sift together and set aside: { 2 cups flour 4 tsp baking powder 1/2 tsp salt 1 tsp cinnamon } mix together and thoroughly blend: { 1/2 cup brown sugar 1/2 cup maple syrup 1/4 cup oil 1-2 tsp vanilla cooked apples } then mix the two batches together, adding 2/3 cup walnuts preheat oven to 350, grease 9x5.5 loaf pan and pour in batter. bake 1hr + until toothpick comes out clean. always seems to need at least 20 more minutes for me. also always seems to make more than one loaf pan worth-- like, double batch => 3 loaf pans. cool for 5 minutes in pan before removing to wire rack glaze: around 1.5 cups powdered sugar, 1.5 tbsp corn syrup one capful vanilla. add rice milk gradually until consistency is pleasing. wait til bread is completely cooled before applying.
