saute 6 cloves minced garlic and 1 cup well-chopped onion in 3TB oil for 5min add 1 chopped red bell pepper, sautee 1 more minute. move to a large pot, add 3 diced carrots, 1 10oz can of mushrooms + their liquid, 28 oz of canned san marzano tomatos, 6oz tomato paste, 1 TB basil, 1 TB oregano, 4 TB chopped fresh basil, 1 tsp salt, 1/2 tsp pepper. bring to boil, then simmer for 40 minutes, covered, stirring occasionally. optional: add some non-marinated artichoke hearts or squash or other veggie. add 2 bay leaves.
